Cinnamon Apple & Pear Pie Chia Pudding
Chia pudding
5 tbsp chia seeds
1/2 cup coconut milk
1/2 cup almond milk
***OR 1 cup almond/cashew protein milk
1/3 cup unsweetened apple sauce
1 tbsp maple syrup (Choc Zero)
1 tsp vanilla extract
1/4 tsp cinnamon
Sautéed apples
1 tbsp coconut oil
1 apple & 1 pear, peeled and cut into cubes
1 tbsp maple syrup (Choc Zero)
1/2 tsp cinnamon
Instructions
Whisk all the chia pudding ingredients together in a bowl. Place in the fridge to set for at least an hour or overnight.
Heat the coconut oil in a pan on medium-high heat. Add the fruit, maple syrup, along with the cinnamon and mix everything together letting cook for 2 minutes.
Reduce the heat to medium and let cook another 5-6 minutes, stiring often until the apples are soft, then remove from heat and let cool.
Layer the chia pudding and fruit in small jars or in a bowl and enjoy!
